Chris’ Christmas Rice Crispy Treats!



  1. Melt margarine in large saucepan over low heat. Add marshmallows and stir until completely melted. Remove from heat.
  2. Add Fruity Pebbles. Stir until well coated.
  3. Using buttered spatula or waxed paper, press mixture evenly into 13 x 9 x 2-inch pan coated with cooking spray.
  4. Drizzle your choice of melted chocolate bark on the top.
  5. Cut into 2-inch squares when cool or use Christmas cookie cutters for fun shapes.
  6. Serve and enjoy!



Million Dollar Spaghetti

So it’s been a while since we have cooked a meal in our home. (Frozen meals don’t count.)

Ever since we had our baby girl, moved to a new state, moved into a new home, a new church, a new job, and getting to know new friends, things have been a bit busy for the Meek household to say the least.

Tonight we tried a recipe that is “Trim Healthy Momma” approved!

When served with a fresh salad topped with Olive Garden Dressing, purchased at your friendly neighborhood Walmart, this is a meal the whole family can enjoy!

Million Dollar Spaghetti:

What you’ll need:

  • 1 (8 ounce) package spaghetti
  • 1 pound lean ground beef or turkey
  • 1 (16 ounce) jar spaghetti sauce
  • 1/2 cup butter, sliced – divided
  • 1 (8 ounce) container cottage cheese
  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup sour cream
  • 1 (8 ounce) package shredded sharp Cheddar cheese


  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Transfer to a bowl and mix spaghetti sauce into ground beef.
  • Place half the slices of butter into the bottom of a 9×13-inch casserole dish. Spread half the spaghetti into the dish. Mix cottage cheese, cream cheese, and sour cream together in a bowl; spread mixture over spaghetti. Layer remaining spaghetti over creamy mixture. Top with remaining pats of butter.
  • Pour ground beef/turkey mixture over spaghetti and spread to cover casserole.
  • Bake in the preheated oven for 30 minutes. Spread Cheddar cheese over casserole and continue baking until cheese has melted and is lightly browned, about 15 more minutes.


  • Aluminum foil can be used to keep food moist, cook it evenly, and make clean-up easier.


Shirley’s Country Cookin’: Banana Pudding

Get ready for the best tasting Banana Pudding you’ve ever put in your mouth!

It’s a recipe from our dear friend, Shirley!


  • One large box of instant vanilla pudding mix
  • 1 package of 8 oz. cream cheese
  • 1 can of eagle brand milk
  • 2 1/2 to 3 cups of milk
  • 1 box of vanilla wafers
  • 1 large carton of Cool Whip
  • Fresh bananas


  • Combine the first three ingredients together and add the milk. Mix well in large mixing bowl.
  • Fold in 1/2 carton of cool whip.
  • Slice the bananas into bite size pieces.
  • Layer in a large serving bowl the wafers, bananas, and pudding mix.
  • Top it off with the rest of the cool whip and nuts (if desired)
  • Refrigerate at least 2 hours before serving to guest.

Jesika’s Gigantic Tripple Chocolate Trifle

So here is a tasty dessert that will leave you and your family begging for more!

It’s a recipe from our dear friend, Jesika!


  • One box brownie mix (family size
  • 2 boxes instant chocolate pudding
  • 1 container Cool Whip
  • 1 bag mini heath bars (or one bag of Heath Toffee Bits)


  • Soften Cool Whip in refrigerator.
  • Bake brownies as directed. Let cool.
  • Make instant pudding as directed and chill.
  • Process the heath bars until ground, but not powdery. (Or buy a bag of Heath Toffee Bits in the baking aisle)
  • When the brownies are cool, divide into thirds. Crumble 1/3 of the brownies into bottom of a trifle dish. Top brownies with 1/3 of pudding, followed by 1/3 Cool Whip and 1/3 Heath candy bits. Make two more layers and refrigerate for 8-10 hours.



Meekernator Meatloaf

Here is a meatloaf recipe that we thoroughly enjoy and we hope your family will too!

Preheat oen to 375 degrees.

You will need:

  • 1 lb. of ground beef or turkey (add more to your liking)
  • 1 1/4 teaspoon of sea salt
  • 1/4 teaspoon of black ground pepper
  • 1/2 cup of freshly chopped onion
  • 1/2 cup of freshly chopped orange and/or green bell pepper
  • 1 egg
  • 1 cup of freshly chopped tomato(s)
  • 1/2 cup of cooking oats


  • 1/3 cup of ketchup
  • 2 tablespoons of brown sugar
  • 1 tablespoon of mustard
  • (add more to your liking)


  • Mix all meatloaf ingredients well and place in a (loaf shaped) backing dish
  • Mix topping together in a small bowl, then spread on the top.
  • Bake for 1 hour.

Serve with fresh green beans, and a baked sweet potato, and enjoy!


Chris’ Country Stew

It is currently 27 degrees here in Dallas Texas with freezing rain and ice all over the place. Today, most of the Metroplex School District’s are closed down so we’re home today with a fire crackling in the fireplace and season One of Little House on the Prairie.

Here is a recipe bound to keep you warm! You can use fresh, frozen, or canned veggies for this recipe. Whatever floats your boat.  Feeds aprox. 4 people. Double the recipe for double the fans.

You will need:

  • 1 lb. of ground beef or turkey (add more to your liking)
  • 1 can of cut green beans (14.5 oz)
  • 1 can of Black-eye beans or Black-beans (14.5 oz)
  • 1 can of whole kernel corn (15.25 oz.)
  • 1 can of diced “chili ready” tomatoes (14.5 oz) or 1 can of Ro-tel diced tomatoes and chilis)
  • 1 bag of Chili Seasoning mix (1.25 oz) or desired seasoning


  • Brown the ground meat in a skillet.
  • Drain excess grease.
  • Stir in the Chili Seasoning Mix as desired.
  • Cover. Reduce the heat and simmer 10 minutes, stirring occasionally.
  • Pour all veggies in a different large mixing pot. Have heat set to medium/high.
  • Stir occasionally till hot.
  • Add in drained ground meat and stir.
  • Cover. Reduce the heat and simmer 5 minutes, stirring occasionally.
  • Serve with freshly made cornbread or crackers!

Top it off with sour-cream and sprinkled with cheese and enjoy!


Homemade Hot Cocoa

It’s cold once again in the North Texas area, and what better way to stay warm than a nice cup of homemade hot cocoa!

You will need:

  • 3  1/2 cups of sugar
  • 2  1/2 cups of cocoa
  • 1 tablespoon of salt


In a large bowl, mix all dry ingredients. Store in an air tight container for future use.

For individual serving:

  • Pour 1 cup of whole milk in a microwaveable safe mug until it gets hot.
  • Add 2 tablespoons of your homemade cocoa mix and stir until it dissolves and enjoy!
  • Add mini marshmallows or peppermint for extra flavor and top off with Whip Cream and a sprinkle of cinnamon.
